Sodium carboxymethyl cellulose (CMC) is widely utilized in various industries, including food, medical, printing and dyeing, and petroleum. Its purity has a direct impact on the product's stability, safety and functionality.

1.Solubility & Transparency

High purity. CMC dissolves fast, leaving a clear and particle-free solution that is ideal for goods that require high transparency, such as beverages and eye drops. If the dissolving is slow or the solution appears turbid, it could suggest low purity, which will damage the product's appearance and homogeneity.

2.Viscosity Stability

High purity CMC has a steady viscosity and is less sensitive to pH, temperature, and salinity. It is appropriate for scenarios involving long-term storage or use under harsh conditions, such as high-temperature drilling fluids.
In contrast, low quality CMC contains more contaminants, which can interfere with molecular chain hydration, influence viscosity, and reduce thickening ability.

3.Salt and acid resistance

High purity CMC has a homogeneous substitution degree, a stable molecular structure, and can function in acidic or high salt conditions, ensuring stability in foods like fruit juice and spice sauce.

However, impurities in low purity CMC may disrupt the regularity of molecular chains and trigger structural dissociation under acidic conditions or in the presence of salt ions, leading to flocculent precipitation in acidic foods such as yogurt and affecting the uniformity of product texture.
